INJECTION AND TUMBLING

Marinades, rubs, sauces, and surface applications can deliver strong flavor to the outside of a product, but injection and tumbling are used when processors want flavor, moisture, and functionality deeper inside the product.

Injection is commonly used for turkey, chicken, pork, ham, bacon, seafood, and deli meats. It is an efficient way to deliver brines, smoke flavors, seasoning systems, salt, sugar, and other functional ingredients evenly throughout the product.

When smoke is applied only from the outside, the strongest smoke flavor is usually at the surface. By adding SmokeStream™ smoke flavorings directly into brines, marinades, or tumbling systems, processors can create a more uniform smoke profile throughout the product.
